A love for food that takes him back to his childhood has allowed Jacob Jan Boerma to match work and passion for the rest of his life.

THE CEASELESS ENERGY that drives Jacob and his wife to travel all across the globe to find new flavours, ingredients and recipes is part of a innate vitality and constant passion for food, cooking and the kitchen – something Jacob talks about with the constance of a torpedo engine!


This love for travelling comes from Jacob's childhood experiences with his parents, that allowed him to taste and be influenced by different cultures, and it's these early confrontations that have planted the culinary seed in him at a young age.


After attending hotel school in Groningen, and after gaining experience at exclusive restaurants in Germany, England and Belgium, he became head chef at the one-star Restaurant de Nederlanden. Under his management, the restaurant received its second star, until in 2002 he opened his own restaurant with his wife Kim, his two-star playground.


With his professionalism and obsession with detail and through his travels, local Scandinavian ingredients, a touch of Spanish technique and expertise picked up in France and Italy, he delivers his ideas to his anxious and pleased clientele  - lobster with lime and eastern spices, Japanese algae lacked sea bass, shellfish and crustacean with fresh cucumber and Japanese flavours and his Hazelnut Sensation, a journey through the different tastes and textures of hazelnuts, with vinegar, roasted hazelnuts liqueur and organic hazelnut oil, which gained him 19 Gault Millau points as well as the 2010 Chef of the Year prize.


The right balance between his excitement and a deep knowledge of temperature and textures makes him a unique character in gastronomy and an inspirational chef for all those who want to learn to be out of the ordinary.
